Chicken salad is an easy meal to make at home. Following this recipe will lead even amateur cooks to preparing a delicious dish of chicken salad.

Although there are many variations and alternate ingredients that may be used in the dish, chicken salad recipes are generally easy. Making chicken salad at home does not fundamentally require more than chicken, mayonnaise, and celery, although there are many other ingredients that spice the dish up a little. Following is an easy chicken salad recipe that uses a few extra delicious ingredients.

Easy Chicken Salad Recipe Ingredients

  • 1 1/2 lb boneless, skinless chicken breast meat
  • 1 large stalk of celery, diced
  • 3/4 cup mayonnaise
  • 1/4 cup minced onion
  • 1 tablespoon lemon juice
  • 1 teaspoon spicy brown mustard
  • 1 teaspoon Old Bay Seasoning, or any other similar seasoning
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon finely chopped cilantro
  • extra salt, if necessary

Easy Chicken Salad Recipe, Cooking Instructions

  1. Chop the chicken into slices, and poach the chicken in water or broth until it is cooked. Although a necessary preparation for this recipe, this is one of the healthiest ways to cook chicken.
  2. After the chicken is cooked, dice it into much smaller pieces, and place it into a large mixing bowl.
  3. Dice the the celery into small pieces, and add that to the bowl with the chicken. Mince the onion, and add that to the bowl. If the chicken is still very hot, place the bowl in the refrigerator for twenty minutes or so, to cool the chicken before the mayonnaise is added in.
  4. In another bowl, the remaining ingredients will be combined, and then that will be stirred into the bowl with the chicken, celery, and onion. Mix the mayonnaise, mustard, and lemon juice together first in a smaller bowl. Then whisk in the Old Bay, and pepper, and finely chop the cilantro, and whisk that in as well.
  5. Add the contents of the bowl with the mayonnaise to the larger bowl with the chicken, celery, and onion. Gently stir everything together, and add salt if necessary. Cover, and refrigerate the chicken salad until it is ready to be used.

This easy chicken salad recipe is not difficult to follow, but it includes a few extra ingredients that really spice it up. This should produce enough to feed a family. Once made, chicken salad is great on sandwiches, when used with lettuce and tomato, or it can be served over a bed of lettuce, as in an actual salad. For novice cooks, making chicken salad at home does not require the use of anything more than chicken, mayonnaise and celery, although the additional ingredients do make the dish much tastier. Other ingredients, such as minced banana and hot pepper may be relished by some, and some of the ingredients may be excluded, depending on the tastes of different people.
